Friday night dinner with friends: chilli con carne
Since it is avocado season, I have been in the mood for some Mexican food. So chilli con carne it was and what better day to cook it than on a Friday when friends are coming over for dinner.
The chilli con carne was served 2 ways, catering for all meat lovers and vegetarians! For the vegetarian version, omit the beef mince and replace it with cooked quinoa. It can double as the perfect meat free Monday start to the week, just leave the tequila in the cupboard 😉
So here is my version of chilli con carne with an extra boost of iron from the spinach.
