Summer is almost here: Oat pancakes filled with harissa corn, pea pesto and tomatoes
Pancakes are the perfect comfort food and there is nothing that calls more for pancakes than a rainy day, or any day for that matter with these wheat free pancakes. I don’t know of anyone who does not love pancakes, sweet or savoury.
What makes pancaks even better is a wheat- free version. Less guilt and less carbs. I stumbled on the recipe for the pancakes on one of the blogs I check from time to time, Naturally Ella. I made a few changes here and there and I hope that you will enjoy them just as much as I did. It even featured on a Meat free Monday menu of Carola Ann’s.
Oats is the perfect health food being rich in fiber, it lowers cholesterol, stabilizes blood sugar levels which reduces the risk of type 2 diabetes, it helps control blood pressure and aids in preventing heart disease. No wonder oats is also the perfect breakfast porridge. If you are sensitive to gluten, you can see if oats will work for you or not. Oats is suppose to be gluten free but these days almost all oats are packed in factories that handles wheat, barley and rye. So you will be sure to find traces of gluten in packed oats. Make sure you buy certified gluten-free oats if you have an allergy.
You will also be sure to get a boost in vitamins, minerals and antioxidants from the tomatoes and peas.
If you are lucky enough to have a coffee grinder it is so easy to mill your own oat flour or even the ever so popular flax seed flour these days. Other wise check your nearest health shop for the essentials.
